Assuming that this is private use (no breach of copyright intended, Bill), this map gives an impression of the distances and relationships between places in this trip.
At least one gallon per person per day is recommended by the National Park Service. I was away from my car for just under 24 hours, and I consumed three 32 oz. bottles of Gatorade and 2.5 litres of water. That seemed to be plenty, but I did a lot of my hiking during the cool evening and morning.
Driving north on Saturday and Sunday, I got the following:
Zion to St. George 60 miles 1 hour
St George to Nephi 221 miles 3 hours
Nephi to Salt Lake City 80 miles 1.5 hours
